- 1 tbsp Dijon mustard
- 2 tbsp balsamic vinegar
- 200 ml vegetable oil
- 1 pinch salt
Place the Dijon mustard and balsamic vinegar in a tall, narrow container, then mix thoroughly with an immersion blender.
While continuously blending, slowly pour in the vegetable oil in a thin stream until you get a thick, smooth emulsion. Finally, season with a pinch of salt, mix well, and refrigerate before serving to allow the flavors to meld.
Chef's tip
The dressing can be stored in the refrigerator in a well-sealed jar for up to a week. Shake before use!
