Preparation method
Ingredients overview
- 3 pcs egg yolks
- 10 g mustard
- 2 pinches salt
- 460 ml sunflower oil
- 1 tsp white wine vinegar
- Juice of 1 small lemon
Mix the egg yolks with the mustard and a pinch of salt, then refrigerate for 20 minutes to chill. Also chill the oil. It is important that all ingredients are at the same temperature.
Start whisking the chilled egg yolks, and while continuously whisking, slowly pour in half of the oil in a thin stream. As soon as the mixture begins to thicken, add the vinegar and lemon juice. Mix thoroughly.
While continuously whisking, pour in the remaining oil in a thin stream. Whisk until the mayonnaise is thick and creamy. Finally, season with one or two more pinches of salt to taste, and keep refrigerated until serving.
Chef's tip
Use the freshest eggs possible. An immersion blender can also be used for faster results. If the mayonnaise accidentally separates, start over with a fresh egg yolk and slowly add the separated mixture to it.
