Preparation method
Preparation and pre-baking
Preheat the oven to 200 °C. Wash and scrub the potatoes thoroughly, then prick them in several places with a fork. Lightly coat them with sunflower oil and sprinkle with a pinch of salt.
Place the potatoes on a baking sheet lined with baking paper and bake for 45–50 minutes until their skin is crispy and the inside is completely soft. Then allow them to cool for 10 minutes.
Preparing the filling
While the potatoes are baking, finely dice the dry sausage and onion, and crush the garlic. Fry the sausage in a pan for 3–4 minutes until it releases its delicious fat, then add the onion and cook until translucent. Finally, stir in the garlic and sweet paprika, then remove from the heat.
Chef's tip
If you prefer an even silkier filling, you can also mix a little creamy sheep curd cheese into the mashed potatoes alongside the sour cream.
The skin of the potatoes will get truly crispy if you pat them thoroughly dry before coating them with oil.
