Cut the pork shoulder into finger-thick strips (tokány cut). Dice the smoked bacon, and finely chop the onion and garlic. Cut the TV pepper into strips and dice the tomato into small cubes.
Sautéing and simmering
In a deep pan or pot, render the fat from the bacon cubes together with a little lard, then add the finely chopped onion and sauté until translucent.
Add the pork strips to the pot and sear over high heat for a few minutes until they turn white. Add the crushed garlic, sprinkle with sweet paprika, and quickly stir so the paprika does not burn.
Chef's tip
If you prefer spicier flavors, you can also add a little hot paprika powder or sliced hot green pepper to the ragout.
The essence of the tokány cut is that the meat is cut perpendicular to its fibers into approx. 1 cm thick strips instead of cubes, keeping it extremely tender and juicy while simmering.
