Rinse the lentils thoroughly under cold water, then drain. Cut the Kolozsvár bacon into fine strips and slice the smoked sausage into rounds. Finely chop the onion and garlic, and slice the peeled carrots into thin rounds.
Sautéing and simmering the stew base
Heat the lard in a large pot, then add the sliced bacon and fry until crispy. Add the sliced sausage and fry for another 2-3 minutes until nicely browned. Transfer the fried meats to a plate, leaving the flavorful fat in the pot.
Sauté the finely chopped onion in the hot fat until translucent, then add the garlic and carrots. Sauté together for 2 minutes, then remove from the heat and sprinkle with sweet paprika. Stir quickly so the paprika does not burn.
Chef's tip
If you prefer an even silkier sauce, you can mix the sour cream with a teaspoon of flour before tempering.
The stew tastes even better the next day when reheated, as the spices and smoky flavors combine thoroughly.
