Cut the chicken thigh fillets into bite-sized pieces of about 3-4 cm.
In a bowl, mix together the soy sauce, crushed garlic, finely grated ginger, sesame oil, and mirin.
Toss the chicken pieces into the marinade, massage them thoroughly, then let them sit at room temperature for at least 20-30 minutes so the flavors penetrate the meat.
Chef's tip
Cornstarch is the secret to the feather-light and long-lastingly crispy coating of authentic Japanese karaage.
If you do not have mirin at home, you can substitute it with a mixture of 1 tablespoon of rice vinegar and 1/2 teaspoon of sugar.
