A csikóstokány a hagyományos magyar pásztorkonyha egyik legízletesebb ékköve: füstölt szalonnán indított, szaftos sertéshúscsíkok édes nemes paprikával, friss zöldségekkel és krémes tejföllel összefőzve.

Cut the pork shoulder into thin strips, about 5-6 cm long (tokány cut). Cut the Kolozsvár bacon into strips, finely chop the onion, and crush the garlic. Cut the wax peppers and tomatoes into small cubes.
In a small bowl, whisk the sour cream with the wheat flour and a little cold water until completely smooth.
Cooking
Heat the lard in a deep pot and render the bacon strips until the fat is rendered out. Add the finely chopped onion and sauté until translucent.
Chef's tip
The cutting technique for tokány is key: the meat is cut into finger-thick, oblong strips rather than cubes, keeping it juicy and cooking quickly.
If you prefer it spicier, you can enrich the sauce at the end of cooking with a few slices of hot green pepper or hot paprika powder.
