Az égei-tengeri török konyha egyik legkedveltebb hideg étele a barbunya pilaki. Ebben a gazdag, laktató salátában az omlós tarkabab édeskés sárgarépával, hagymával, aromás fokhagymával és sűrített paradicsommal párolódik készre, majd kiváló minőségű extra szűz olívaolajjal, friss citromlével és rengeteg petrezselyemmel válik teljessé. Rinse the pinto beans thoroughly in a colander under cold water, then drain well. (If using dry pinto beans, soak them in plenty of water overnight, then the next day cook in lightly salted water until tender, but not too soft so they do not fall apart).
Peel the carrots and cut them into rounds about half a centimeter thick. Finely dice the onion, and peel and thinly slice the garlic cloves.
Braising and assembling
Heat half of the extra virgin olive oil (approx. 30 ml) in a deep pan. Add the finely chopped onion and sliced carrots, then sauté over medium heat for 5-6 minutes until the onion is translucent and the carrots soften slightly.
Chef's tip
Barbunya pilaki is a classic olive oil dish (zeytinyağlılar) that tastes even better the next day after resting in the refrigerator, as the pinto beans absorb the sweet, silky vegetable juices.
Granulated sugar is an essential component of pilaki: it mellows the acidity of the tomato paste and fresh lemon juice, creating a perfect balance with the autumn vegetables.
