Kifli Kukták

Melengető, gazdagon fűszeres indiai egytálétel, amelyben a selymes kókusztej, az édeskés őszi sütőtök és a tápláló lencse alkot tökéletes harmóniát. Friss bébispenóttal és illatos basmati rizzsel tálalva igazi lélekmelengető fogás hűvös napokra.

Preparation method

Preparation

1

Peel the pumpkin, remove the seeds, and cut into approximately 2-centimeter cubes. Finely chop the onion, garlic, and fresh ginger. Rinse and drain the canned lentils in a sieve.

2

Put the basmati rice on to cook in twice its volume of lightly salted water; once boiling, cover and steam over low heat for 12–15 minutes until tender and fluffy.

Cooking

1

Heat 2 tablespoons of coconut oil in a large pot over medium heat. Add the chopped onion and sauté for 4–5 minutes until translucent and golden. Then add the minced garlic and grated ginger, and sauté for another 1 minute until fragrant.

Chef's tip

Leftover curry keeps perfectly in an airtight container in the refrigerator for up to 3 days. When reheated, the flavors meld together even better; if it gets too thick, loosen it with a little water or coconut milk.

If you want an even more substantial meal, you can also serve it with warm garlic naan bread or crispy papadums.
