Preparation method

Preparation

1

Rinse the yellow split peas thoroughly under cold running water until the water runs clear. If time permits, soak them in lukewarm water for 30 minutes to help them soften faster and more evenly.

2

Finely chop the onion, garlic cloves, and peeled fresh ginger. Peel the carrots and slice them thinly into rounds.

Cooking

1

Heat the ghee in a deep pot over medium heat. Add the finely chopped onion and sauté until translucent, about 4-5 minutes. Then add the grated garlic and ginger, and sauté for another minute until fragrant.

Chef's tip

If you prefer an even creamier texture, take 1-2 ladles of the cooked yellow split peas from the pot towards the end of cooking, puree them until smooth with an immersion blender, and stir them back into the curry.

This dish tastes even better the next day as the Indian spices completely meld with the yellow split peas. It stays fresh in an airtight container in the fridge for 3-4 days; however, as it thickens over time, it is best to stir in a couple of tablespoons of water when reheating.
