Thoroughly rinse the jasmine rice in cold water, then cook covered in twice the amount of lightly salted water over low heat for 12-15 minutes until soft, then leave covered to rest.
Finely chop the garlic cloves or coarsely crush them in a mortar together with the whole black peppercorns. Clean and rinse the shrimp, then pat completely dry with paper towels.
In a small bowl, mix together the soy sauce, oyster sauce, fish sauce, and cane sugar until smooth.
Chef's tip
Always thoroughly pat the shrimp dry with paper towels before cooking so that they sear immediately in the hot garlic oil instead of steaming.
Do not burn the crispy golden garlic: as soon as it turns light golden, immediately remove it from the heat, as it will continue to cook a bit more in the bowl with the residual hot oil.
