A csikóstokány a hagyományos magyar pásztorkonyha egyik legfinomabb, szaftos egytálétele. A csíkokra vágott sertéshús füstölt szalonnával, roppanós paprikával és krémes tejföllel gazdagítva garantált családi kedvenc.

Wash the pork leg, pat dry, then cut into thin, finger-wide strips. Finely dice the smoked bacon. Finely chop the onion and garlic, slice the TV peppers into strips, and dice the tomatoes.
Cooking
Melt the lard in a large pot and render the fat from the smoked bacon. Add the finely chopped onion and sauté until translucent, then add the crushed garlic.
Remove the pot from the heat, sprinkle with sweet ground paprika and ground caraway, stir well, then return to the heat and add the sliced pork. Sear over high heat until the meat turns opaque.
Chef's tip
The characteristic feature of tokány is cutting the meat into strips and a concentrated, thick sauce, so add only minimal liquid during simmering.
You can also serve it with pickled apple peppers or crunchy gherkins for the perfect flavor experience.
