First, thoroughly wash the cabbage and cucumber, then cut both vegetables into very small cubes. Place the chopped vegetables in a large bowl.
Prepare the dressing: Peel the garlic and place it in a blender. Add the nutritional yeast flakes, olive oil, fresh basil, and baby spinach, then blend until completely smooth.
Season the resulting green sauce with freshly squeezed lemon juice, salt, and pepper, then pour it over the cabbage and cucumber mixture. Mix thoroughly so that the dressing coats all the vegetables.
