Preparation method
Preheat the oven to 190–195 °C and prepare a baking dish approximately 30 cm × 25 cm.
Peel the red onion and garlic, then roughly chop them in a food processor. Wash the cauliflower, separate it into florets, add to the onions, and chop everything to rice-grain size. Finely chop the parsley.
Heat 3 tablespoons of oil in a pan over medium heat. Add the cauliflower mixture and sauté for 5–7 minutes. Then pour in 50 ml of water, sprinkle in the parsley, mix, and then spread the mixture into the prepared baking dish.
Chef's tip
If you want crispier cauliflower rice, use a slightly higher temperature when sautéing and add the water only at the very end.
