Kifli Kukták

A klasszikus magyar rakott ételek legfinomabb őszi, zöldséges változata: a diós aromájú, omlósra sült zellergumó és az aranyló burgonyarétegek selymes fűszeres tejföllel és ropogósra pirult trappista sajttal egyesülnek egy laktató, melengető családi fogásban.

Preparation method

Preparation and parboiling the vegetables

1

Thoroughly peel the potatoes and the celeriac. Slice the potatoes and celeriac into uniform rounds or slices, about half a centimeter thick.

2

Bring lightly salted water to a boil in a large pot, then add the celeriac slices and the potatoes. Parboil them for about 8–10 minutes until slightly tender, but not falling apart. Drain and let them steam off slightly.

3

Meanwhile, finely chop the onion and crush the garlic. Heat 20 ml of sunflower oil in a skillet and sauté the onion until translucent, adding the crushed garlic and 3 g of sweet paprika at the end.

Chef's tip

The pleasant sweet, nutty flavor of celeriac concentrates during baking; if you are looking for an especially intense aroma, you can sauté it in butter in a pan before layering instead of parboiling.

If you enjoy smoky flavors, you can replace half of the Trappist cheese with smoked cheese, or layer a few sautéed mushrooms between the vegetables.
