Preparation method

Preparing the marinade and glaze

1

In a small bowl, mix together the dry rub: 1 tsp salt, 1/2 tsp ground black pepper, 2 tsp smoked paprika, and 1 tsp granulated garlic. Brush the turkey breast steaks with 2 tbsp extra virgin olive oil, then thoroughly rub both sides with the spice mix. Let them sit at room temperature for 15 minutes.

2

In a small saucepan or mixing bowl, mix the quince BBQ glaze until smooth: add the 120 g quince jam, 100 ml BBQ sauce, 2 tbsp apple cider vinegar, and 1 tbsp brown sugar. Heat together over low heat for 3-4 minutes until the jam and sugar are completely dissolved, yielding a silky, glossy glaze.

Grilling and caramelizing

1

Preheat the grill or a heavy-bottomed grill pan over medium-high heat. Place the seasoned turkey breast steaks on the grill grate and cook for 4-5 minutes per side until nice grill marks form and the meat is cooked through, yet stays juicy.

Chef's tip

Turkey breast can dry out quickly, so it is important not to overcook it: ensure its internal temperature reaches 74 °C, then let it rest for a few minutes so the juices distribute evenly throughout the meat.

If you desire an even more intense autumn smoky aroma, you can add a few applewood or cherrywood smoking chips to the grill coals at the start of cooking.
