Kifli Kukták

Omlós, fűszeres sertésoldalas mézédes birsalmagerezdekkel, selymes édesburgonyával és lilahagymával egyetlen tepsiben sütve. A gyümölcsös zamat és a szaftos sült hús harmóniája tökéletes őszi hétvégi egytálétellé varázsolja ezt a tradicionális fogást.

Preparation

1

Preheat the oven to 160 °C (top and bottom heat). Wash the pork ribs, pat them dry, then cut them along the bones into pieces with 2-3 ribs each. In a small bowl, mix together the salt, ground black pepper, ground caraway, and sweet paprika for the spice mix.

2

Rub the meat thoroughly with two-thirds of the spice mix, then brush with 2 tablespoons of melted lard. Let it sit for 15 minutes while preparing the vegetables and fruit.

3

Rub the quinces with a kitchen towel to remove the fuzz, wash them, cut into wedges, and core them (peeling is not necessary). Peel the sweet potatoes and cut into thick batons or rounds. Peel the red onions and cut into thick wedges, and cut the head of garlic in half crosswise.

Chef's tip

The skin of the quince softens pleasantly during baking and imparts a wonderful aroma to the dish, so there is no need to peel it.

Before serving, squeeze the roasted garlic cloves out of their skins and stir them into the pan juices – it gives the sauce an exceptionally rich, full flavor!
