A hagyományos pandúrtokány a magyar betyárkonyha egyik legízletesebb gyöngyszeme. A szaftos sertéslapocka a füstölt kolozsvári szalonnával, erdei csiperkegombával, édes zöldborsóval és roppanós csemegeuborkával párosulva alkot tökéletes, tartalmas egytálételt. Egy kevés száraz fehérborral és illatos majorannával megbolondítva a vasárnapi asztal koronája lesz.

Clean the pork shoulder and cut it into even, finger-thick strips. Cut the Kolozsvár bacon and pickled gherkins into thin strips as well. Clean and slice the brown button mushrooms, finely dice the onion, and crush the garlic.

Cooking

In a deep pan or pot, melt the lard and render the sliced Kolozsvár bacon until crisp. Add the finely chopped onion and sauté over medium heat until translucent.

Add the pork shoulder strips to the onion base and sear over brisk heat, stirring constantly, until the meat browns and develops a nice crust.

Chef's tip

The characteristic tangy and smoky profile of pandúr tokány comes from the pickled gherkins and Kolozsvár bacon. Always add the gherkins right at the very end of cooking so they remain pleasantly crunchy and do not get soggy in the gravy.
