Prepare the vegetables: wash the potatoes and carrots thoroughly, peel them, then grate them using a coarse grater into a bowl. Sprinkle with a teaspoon of salt, let stand for 10 minutes, then squeeze out the excess liquid thoroughly.
Finely chop the onion, crush the garlic, and chop the fresh parsley. Grate the Trappist cheese.
Mixing the batter and baking
Add the chopped onion, crushed garlic, and parsley to the squeezed vegetables. Crack in the eggs, sprinkle with black pepper, sweet paprika, and fine wheat flour, then fold in half of the grated Trappist cheese. Mix the mixture thoroughly.

Zero-waste tip: alongside the potatoes and carrots, feel free to mix in other leftover vegetables into the batter, such as parsnip or celeriac.
Dip idea: for an even richer flavor, you can mix a little extra crushed garlic or chopped chives into the sour cream for serving.
