Finely chop the onion and sauté in 1 tablespoon of oil until translucent. Crush 2 cloves of garlic and finely chop the parsley.
In a spacious mixing bowl, combine the cold leftover cooked rice, grated Trappist cheese, sautéed onion, crushed garlic, and half of the parsley.
Add the eggs, sweet paprika, salt, pepper, and half of the breadcrumbs, then knead the mixture thoroughly. If necessary, add a little more breadcrumbs to achieve a shapeable consistency.
Chef's tip
If you use cold cooked rice straight from the fridge, the patties will be much easier to shape and will hold together well during frying.
You can also bake the patties in an oven or air fryer at 190°C for 18–20 minutes, sprayed with a little oil.
