INGREDIENTS
- 4 slices, approx. 15 dkg each, goat cheese
- 4 pcs hamburger buns
- 1 dl extra virgin olive oil
- 1 spoon Dijon mustard
- 1 lemon
- 10 dkg arugula
- Two heads, approx. 30 dkg red onion
- 2 spoons sugar
- 2 spoons balsamic vinegar
- 1 star anise
- 10 dkg walnuts
PREPARATION
- 1For the onion jam, peel and thinly slice or grate the onion.
- 2Sauté it in a little oil, season with salt and sugar, add the vinegar and star anise, then cook until jam-like.
- 3For the vinaigrette, mix the mustard and 0.5 dl olive oil with an immersion blender, and season with a pinch of salt and sugar, or a spoonful of honey.
- 4Fry the goat cheese slices in a little oil in a non-stick or grill pan until golden brown, or you can grill them.
- 5Toast the walnuts in a dry pan until fragrant.
- 6After the cheese, toast the buns as well.
- 7Assemble your burger: place the onion jam on the bottom, then the cheese, followed by the arugula thoroughly mixed with the vinaigrette, and finally the toasted walnuts.
KIFLI TIP
- 1You can also add red wine to the onion jam; in this case, reduce it until it becomes almost syrupy.
- 2Any grillable cheese can be used instead of goat cheese, and the sandwich is perfect even in a baguette.
