
Chicken liver wrapped in bacon, with sweet chili and marinated cucumber

Preparation method
Clean the livers from tendons and membranes, and soak them in milk for 1 hour, into which you have previously grated 2 cloves of garlic and added 2 dag of salt.
Peel and grate the cucumber, salt it, squeeze lime juice over it, add one tablespoon of sushi ginger, half a thinly sliced red onion, and a little honey, then refrigerate until serving. Only sprinkle with spring onion when serving.
Wrap the marinated livers in bacon and sear them all around in a hot pan, then place them in an oven preheated to 180 degrees Celsius for 5-8 minutes.
Chef's tip
If desired, it can also be served as a main course, perhaps with mashed potatoes. Marinated cucumber is a good alternative to traditional cucumber salad. You can also try it with duck liver, or even turkey liver works.
