INGREDIENTS
- 8 smaller slices, approx. 10 dkg each, turkey breast fillet
- 8 slices bacon
- 40 dkg broccoli
- 40 dkg courgette
- Pea shoots
- One tablespoon sliced almond
- 10 dkg butter
- 0.5 dl white wine
- 0.5 dl cream
- 2 stalks spring onion
- Salt
- Pepper
- Half a lemon
PREPARATION
- 1Lightly salt and pepper the turkey fillets, then wrap them in thin bacon slices. If you have a meat skewer, it's worth securing them.
- 2Boil the vegetables in hot salted water for 2 minutes, then refresh them in ice water.
- 3Grill the meat nicely on all sides until cooked through, but not burnt.
- 4For the sauce, reduce the wine and sliced spring onion by half, then add the cream and butter. Simmer until you get a pleasant sauce. Season with salt, pepper, and a few drops of lemon juice if needed.
- 5Serve the meat with the crisp vegetables, butter sauce, pea shoots, and a few toasted, sliced almonds.
Tip
This can also be made with chicken breast or pork tenderloin, but any white fish is also delicious this way.
You can vary the vegetables according to your preference.
