  • 1 kg sushi rice
  • 100 ml rice vinegar
  • 40 g sugar
  • 20 g salt

    Pour the rice into a large bowl and add cold water. Wash the rice thoroughly, drain the water, then refill the bowl. Wash the rice this way until the water is clear, repeating at least five times.

    Place the washed rice in a pot, add 1.25 litres of water, cover with a lid and bring to a boil. Reduce the heat and cook for about 25 minutes, until tender. Remove from heat and let it sit covered for another 10 minutes.

    In a saucepan, combine the rice vinegar, sugar, and salt. Heat until the sugar and salt dissolve. Do not boil! Let it cool.

    Pour the cooked hot rice into a bowl, add the cooled mixture, and gently mix it into the rice with a wooden spoon, being careful not to break the rice grains. While mixing, allow the rice to air out to cool down faster.
