
Silky Green Pea Puree with Tahini

Preparation method
In a pot, bring 1 liter of water to a boil with 5 g of sugar. Add the frozen green peas, wait until it boils again, then cook for exactly 2 minutes.
Drain the peas, but set aside 80 ml of the cooking water. Pour the cooking water into a blender.
Add the cooked peas, the remaining sugar, tahini, olive oil, lemon juice, and salt. Blend for 2 minutes until completely silky and creamy.
Chef's tip
To prepare the puree, a high-powered blender will be needed to achieve a perfectly smooth consistency.
If serving as a dip, offer toasted pita or fresh vegetable sticks alongside.
