Preparation of the Coriander Butter
Press the garlic through a garlic press.
Melt the butter in a small saucepan, add the garlic and grated lemon zest. Heat over low heat for a short time until the garlic becomes fragrant, but be careful not to let it brown! Remove from heat and stir in the finely chopped fresh coriander.
Preparation and Serving of the Corn
In a large pot, bring 3 liters of water to a boil with the salt and sugar. Add the corn cobs and cook covered for about 30 minutes. Occasionally turn the cobs during cooking. Thoroughly drain the cooked corn in a colander.
Chef's tip
You can also finish the corn by grilling instead of pan-frying for an even smokier flavor.
