
Grilled Carrots with Lemon Zest and Thyme

Preparation method
First, bring salted water to a boil in a large pot and preheat the grill.
Wash the carrots, remove their stems, and cut them in half lengthwise. Place them in the boiling water and cook over medium heat for 8–10 minutes, until they are still slightly crunchy.
After cooking, immediately cool the carrots under cold water or in an ice bath. Then, place them on the hot grill and cook for 8–9 minutes, turning them at least once.
Chef's tip
Grilled carrots are an excellent side dish for roasts, but they can also stand alone, sprinkled with a little extra feta cheese.
