Blue Dragon Fish Sauce
Fish sauce is a staple ingredient in Chinese cuisine. It contains no artificial colours, preservatives or flavour enhancers.

Ingredients
20 dkg chicken breast fillet, 2 medium carrots, 1 medium parsnip, 1 medium stick of celery, 1 medium onion, 2 dkg ginger, 1 tbsp peanut oil, 10 dkg asparagus, 2 tbsp soy sauce, 2 tbsp chilli sauce (sweet), 1 tbsp fish sauce, 1 teaspoon oyster sauce, salt to taste, pepper to taste, 1.3 l chicken stock, 0.5 bunch of coriander, 0.5 lime zest, 0.5 lime juice, 15 g dried mushrooms.

Preparation .

1. In a spoonful of oil, start frying the onion cut in half and the ginger cut into thin strips.
2. In the meantime, peel all the vegetables and cut them into thin strips of the same size. Soak the mushrooms in 1 dl of hot water.
3. When the onion starts to brown, add the sliced carrots, parsnips and celery.
4. Add the soy sauce, chilli sauce, fish sauce, oyster sauce, a little salt and pepper and steam for 4-5 minutes.
5. In the meantime, slice the chicken breast very thinly. Dilute the soup with the chicken stock, add the mushrooms with the soaking liquid, the asparagus and the pasta and cook for another 2-3 minutes.
6. Sprinkle with coriander when serving.
