Separate the garlic heads into cloves, but leave the skins on. This protects them during cooking and helps preserve their creamy interior.
Place the cloves in a small saucepan and cover them completely with olive oil. Heat the oil over medium heat to approximately 90 °C. Once it reaches the desired temperature, remove it from the heat and let the garlic cool completely in the oil. Then transfer it to a clean, airtight jar.
Chef's tip
The texture of the confit garlic changes, and it loses its characteristic pungent sharpness. When using, simply squeeze the cloves out of their skins. It pairs excellently with roasted or grilled meats, mashed potatoes, sauces, dressings, or herb butters. The garlic oil can also be used for flavoring in the same way.
