Preparation and sautéing
Thoroughly wash the white and light green parts of the leeks, then slice them into rounds. Peel, core, and dice the apples into small cubes. Crush the garlic cloves.
In a heavy-bottomed pot, melt the butter, then add the sliced leeks and crushed garlic. Sauté over medium heat for about 6-8 minutes until nicely softened and collapsed, but do not brown them.
Cooking and blending
Add the diced apples and thyme to the pot, then pour in the hot vegetable stock. Season with salt and pepper to taste. Bring to a boil, then cover and simmer over low heat for 15 minutes until the apples and leeks are completely tender.
Chef's tip
The soup can be given an even silkier texture by passing it through a fine sieve after blending.
It is best to choose a tarter variety of apple (such as Jonathan or Idared), as the pleasant fruity acidity perfectly balances the natural sweetness of the leeks and the creaminess of the brie cheese.
