
Homemade Yellow Split Pea Soup with Vegetables

Preparation method
Peel and finely chop the red onion and garlic. Peel the carrots and cut them into one-centimeter cubes, do the same with the potatoes. Sort through the yellow split peas and rinse them thoroughly in a sieve.
Heat the oil in a pot and quickly sauté the carrots. When they turn golden in places, add the onion, garlic, a large pinch of salt, oregano, and freshly ground pepper to taste. Stir for a minute until the onion softens and the aromas fill the kitchen.
Pour one liter of water over the soup base, add half of the yellow split peas and the potatoes, then bring to a boil. Cook over moderate heat, uncovered or partially covered, for about 30 minutes.
Chef's tip
When serving, you can offer toasted bread croutons or a little sour cream for an even creamier experience.
