Preparation method
Preheat the oven to 190–195 °C and prepare a baking tray. Clean, peel, and cut the carrots, celery root, parsley root, and onion into larger pieces, then place them on the baking tray. Peel the garlic and add the whole cloves to the vegetables.
Add the sunflower oil, tomato paste, oregano, salt, and pepper. Mix thoroughly, then bake for 40–45 minutes until the vegetables are tender.
About 10 minutes before the end of baking, bring 800 ml of vegetable broth to a boil in a pot.
Chef's tip
Before serving, drizzle a little olive oil over the soup for an even richer flavor.
