Preparation method
Peel and finely chop the red onion. Peel the potatoes, then cut them into small cubes.
In a medium-sized pot, heat the sunflower oil and butter over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
Add the diced potatoes and vegetable broth to the onion. Bring to a boil over high heat, then reduce the heat, cover, and cook for 11-12 minutes until the potatoes are tender.
