Preparation method
First, boil the eggs, as the rest of the recipe is prepared very quickly. Place the eggs in boiling water and remove them exactly after 6 minutes to keep their yolks creamy.
Meanwhile, heat 2 tablespoons of oil in a pan and lightly sauté the sliced garlic, finely chopped chili, and grated ginger. Add the soy sauce, then the enoki mushrooms and the pak choi separated into leaves.
Before placing the enoki mushrooms in the pan, cut them off at the base, but make sure the strands remain intact. Sauté the mushrooms and pak choi for only 1-2 minutes, then remove them from the pan. Reduce the heat to minimum, add the cooked soba noodles, and toss.
Chef's tip
Soba noodles are buckwheat-based, giving the soup a unique, nutty flavor. Be careful not to overcook them!
