A torijiru a japánok egyik legkedveltebb, lélekmelengető őszi levese. Omlós csirkecombfilé, zsenge jégcsapretek, roppanós sárgarépa és aromás shiitake gomba pirul szezámolajon, majd lágy csirkealaplében fő tökéletesre. A főzés végén hozzáadott gazdag miso paszta mély, umami ízt és selymes textúrát kölcsönöz a levesnek. Igazi tartalmas, vitaminban gazdag melengető fogás!

Cut the chicken thigh fillets into bite-sized pieces, about 2-3 cm. Clean the vegetables: peel the daikon radish and carrots, then cut them into half-moons or quarter rounds. Remove the stems from the shiitake mushrooms and slice the caps. Thinly slice the spring onions and finely grate the ginger.
Cooking
Heat the sesame oil in a large pot over medium heat. Add the bite-sized chicken pieces and grated ginger, then sauté for 3-4 minutes until the meat turns white and lightly browns.
Add the chopped daikon radish, carrots, and sliced shiitake mushrooms to the pot. Toss the vegetables with the sesame-coated chicken, and sauté together for 2 minutes.
Chef's tip
Always add the miso to the soup at the very end of cooking with the heat turned off, as boiling destroys the delicate, sweet-umami flavour and valuable nutrients of fermented miso paste.
Torijiru soup keeps well in the refrigerator in an airtight container for 2-3 days, and its flavours blend together even better when reheated. When reheating, warm it gently and do not let it boil!
