Shred the cabbage very finely. Slice the spring onions (set aside a little of the greens for serving). Cut the fresh chicken thigh fillets into thin, bite-sized strips.
In a spacious mixing bowl, whisk together the plain flour, eggs, water, and salt until smooth to form a thick pancake batter.
Fold the finely shredded cabbage and most of the spring onions into the batter until the vegetables are evenly coated.
Chef's tip
Cooking tip: Do not press down on the pancake with a spatula while frying so that the inside stays light, steaming, and tender, while the crust turns irresistibly crispy.
Meat choice: Juicy chicken thigh fillet is ideal for this Japanese dish because it will not dry out during pan-frying, remaining tender and succulent.
