Kifli Kukták

A kobei kikötő ikonikus utcai étele, a sobameshi tökéletes harmóniát teremt a serpenyőben pirított aprított wok tészta, a rizs és a szaftos csirkecombfilé között. Karakteres édeskés-sós yakisoba szósszal összeforgatva, tetején lágy tükörtojással, krémes majonézzel és pirított szezámmaggal tálalva igazi japán street food élmény 20 perc alatt.

Preparation method

Preparation

1

Cut the chicken thigh fillets into small, approx. 1.5 cm cubes. Thinly shred the white cabbage and slice the spring onions (set aside the green parts for garnish). Chop the cooked wok noodles on a cutting board with a large chef's knife into approx. 2-3 cm pieces – this is the key authentic characteristic of sobameshi.

2

In a small bowl, mix together the homemade yakisoba sauce: Worcestershire sauce, soy sauce, and ketchup, until you get a smooth, thick sauce.

Frying and tossing

1

Heat 1 tablespoon of sunflower oil and the sesame oil in a large frying pan or wok over high heat. Add the diced chicken thigh fillets and sear for 3-4 minutes until nicely browned and cooked through.

Chef's tip

For the perfect sobameshi, leftover cooked jasmine or sushi rice from the day before, dried out in the fridge, works best, as it won't stick together during frying and will fry grain by grain.

If you have authentic Japanese Kewpie mayonnaise and bonito flakes (katsuobushi) on hand, feel free to use them for serving for an even richer umami experience!
