Preparation of the 'bones'
First, prepare the yeast dough for the 'bones'. Sift the flour into a bowl, make a well in the center, pour in the lukewarm water, and crumble in the yeast. With a wooden spoon, mix in enough flour from the edges to get a thicker mixture in the center.
Sprinkle salt over the remaining flour on the edges and let it rest for 15 minutes until the starter rises. Once risen, add the olive oil and mix everything together with a wooden spoon.
Turn the dough onto a work surface and knead it into a nice, elastic dough. Return it to the bowl, cover with foil, and let it rise for 1 hour.
