
Creamy Pea Soup with Lemon

Ingredients overview
- 350 g frozen green peas
- 120 g red onion
- 14 g garlic
- 34 g lemon juice
- 700 ml vegetable broth
- 15 g rapeseed oil
- 1 pinch salt
First, finely chop the red onion and garlic. Heat the oil in a medium-sized pot, then sauté the onion over low to medium heat until translucent (approx. 4 minutes).
Add the garlic and sauté for another 1 minute. Then add the green peas, pour in the broth, bring to a boil, and cook for 15 minutes over low to medium heat.
Finally, blend the soup until smooth with an immersion blender, season with salt and lemon juice, then serve.
Chef's tip
When serving, you can offer toasted croutons or a little cream for an even creamier texture.
