  • 750 ml vegetable broth
  • 200 g butter
  • 1 tsp salt

    Peel the carrots and cut them into larger cubes. Place them in a saucepan with all other ingredients and bring to a boil.

    Reduce the heat and cook until the carrots are completely soft and the liquid thickens to a syrupy consistency.

    Thoroughly puree the mixture with an immersion blender, then pass it through a fine sieve into a clean bowl for a perfectly silky texture.

    Season with more salt if needed, or if it's too thick, thin it with a little warm vegetable broth. A pinch of sugar can further enhance the natural sweetness of the carrots.
