- 750 g carrot
- 750 ml vegetable broth
- 200 g butter
- 1 tsp salt
Steps
- 1Peel the carrots and cut them into larger cubes. Place them in a saucepan with all other ingredients and bring to a boil.
- 2Reduce the heat and cook until the carrots are completely soft and the liquid thickens to a syrupy consistency.
- 3Thoroughly puree the mixture with an immersion blender, then pass it through a fine sieve into a clean bowl for a perfectly silky texture.
- 4Season with more salt if needed, or if it's too thick, thin it with a little warm vegetable broth. A pinch of sugar can further enhance the natural sweetness of the carrots.
