Ingredients

  • 200 g tofu
  • 1 tbsp cooking oil
  • 1 small onion
  • 2 cloves garlic
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 2 tbsp peanut butter
  • 250 ml coconut milk
  • 100 ml vegetable broth
  • 100 g spinach
  • 1 tsp lime juice
  • Salt to taste
  • 120 g basmati or jasmine rice

Preparation

    Cook the rice according to package instructions.

    Cut the tofu into bite-sized cubes. Finely chop the onion, mince the garlic, and grate the ginger.

    Heat the oil in a pan, add the onion, and sauté for about 2 minutes until softened. Add the garlic and ginger, then cook for another 30 seconds.

    Stir in the curry paste and peanut butter, and heat briefly to release the flavors.

    Pour in the coconut milk and vegetable broth, then simmer.

    Add the tofu and cook for about 10 minutes until the sauce thickens.

    Add the spinach or green beans and lime juice, then cook for another 2 minutes.

    Taste and season with salt to your liking.

    Serve with steamed rice!
