  • 1 kg mixed sea fish
  • 500 g seafood
  • 2 pcs leek
  • 4 pcs garlic clove
  • 4 pcs tomato
  • 1 bunch thyme
  • 2 pcs bay leaf
  • 5 g saffron
  • 200 ml white wine
  • 1500 ml fish broth
  • 10 g salt
  • 5 g pepper
  • 30 ml olive oil
  • 10 g fresh parsley

    Prepare the vegetables: Finely chop the onion, leek, garlic, and tomato.

    Sauté the vegetables: Sauté the onion, leek, and garlic in olive oil.

    Add tomatoes: Add the diced tomatoes and continue to sauté for a few more minutes.

    Seasoning: Add thyme, bay leaf, saffron, salt, and pepper.

    Add wine and broth: Pour in the white wine, bring to a boil, then add the vegetable broth.

    Simmering: Simmer on low heat for 30 minutes for the flavors to meld.
