Preparation method

Preparing the grains

Rinse the farro thoroughly under cold water, then add it to a generous amount of lightly salted boiling water. Cook over medium heat until tender yet pleasantly chewy (al dente), about 25-30 minutes. Drain and allow to cool to room temperature.

Toasting the mushrooms and pine nuts

In a dry skillet, toast the pine nuts over low heat for 2-3 minutes until golden brown, watching carefully so they do not burn, then set aside in a small bowl.

In the same skillet, heat 2 tablespoons of extra virgin olive oil. Add the cleaned, wedged mixed wild mushrooms and sauté over high heat for 5-7 minutes until they turn a nice golden brown. In the final minutes, stir in the finely minced garlic and thyme, and season with salt and pepper to taste.

Chef's tip

When sautéing mushrooms, it is important that the pan is hot and you do not salt them right at the beginning – this way they brown beautifully instead of releasing liquid and steaming.

The farro salad also makes a wonderful cold packed lunch the next day, as the flavors meld together even better!
