Preparation method

Preparing the base and vegetables

Peel the potatoes and cut them into slices approximately half a centimetre thick. Finely slice the onion, mince the garlic, and after peeling the apples, core and cut them into thin wedges.

In a pot of lightly salted water, parboil the potato slices for 8-10 minutes until they are semi-soft, then drain carefully and set aside.

Preparing the cider sauce

Heat 2 tablespoons of extra virgin olive oil in a large, deep frying pan. Add the sliced onion and sauté over medium heat until translucent, about 5 minutes. Stir in the minced garlic and apple wedges, then cook together for another 2 minutes.

Chef's tip

For an authentic Asturian version, a dry, tart cider or natural hard cider works best, as it perfectly balances the natural sweetness of the fish and apples.

Take care not to overcook the hake fillets: as soon as the fish turns snow-white and flakes easily with a fork, immediately remove from the heat to keep it tender and juicy.
