A klasszikus magyar konyha egyik legfinomabb őszi fogása: zsenge piaci karalábéból és édeskés sárgarépából készült, vajas alapon párolt, selymes tejfölös habarással és bőséges friss petrezselyemmel gazdagított főzelék.

Thoroughly wash and peel the vegetables. Cut the kohlrabi and carrots into uniform, approx. 1.5 cm cubes or thin batons. Finely dice the onion, and crush or grate the garlic cloves.

Cooking

Melt the butter in a pot over medium heat, add the finely chopped onion, and sauté until translucent, about 3-4 minutes. Then stir in the crushed garlic and sauté for another 30 seconds until fragrant.

Add the prepared kohlrabi and carrots to the onion base. Season with salt and pepper to taste, then sauté the buttered vegetables, stirring constantly, for 3-5 minutes so the flavours meld nicely and the vegetables caramelize slightly.

Chef's tip

If you bought really tender, young kohlrabi, do not throw away the smaller inner green leaves: wash them thoroughly, slice into thin strips, and stir them into the finished stew along with the parsley for an extra fresh flavour and vibrant green colour.

The stew keeps well in the refrigerator for 2-3 days; when reheating, if it thickens too much, it can easily be loosened back to a silky consistency with a little hot stock or water.
