Preparation and caramelizing the cabbage

Clean the cabbage, remove the outer leaves and the core, then grate it or cut it into thin strips. Sprinkle with the salt and let it sit for 10 minutes to release its moisture, then squeeze it out thoroughly.

Melt 2 tablespoons of lard in a deep, wide skillet or pot, sprinkle over the granulated sugar, and lightly caramelize over medium heat until golden brown. Toss in the finely chopped onion, then add the squeezed cabbage.

Sauté the cabbage over medium heat, stirring frequently, for 15-20 minutes until nicely caramel brown, soft, and fragrant. Season generously with freshly ground black pepper.

Chef's tip

If you have leftover cooked carrots from meat broth or a little crispy fried bacon at home, feel free to toss them in together with the crescent roll cubes.

It can also be made wonderfully with stale bread rolls or sweet braided milk bread (kalács) – made with sweet bread, you get an exceptionally delicious sweet-and-peppery contrast.
