Ingredients

  • 1.2 liters chicken broth
  • 10 tiger shrimp (peeled, with tails on)
  • 6 kaffir lime leaves, torn
  • 4 slices galangal root
  • 2 tablespoons fish sauce (or to taste)
  • 2 tablespoons fresh lime juice
  • 1 tablespoon Thai chili sauce (Nam Prik Pao)
  • 200 g button mushrooms
  • 100 g cherry tomatoes, halved
  • Optional: fresh coriander for garnish

    Flavoring the broth: Bring the chicken broth to a boil. Add the lemongrass, galangal, and lime leaves. Simmer for 5–7 minutes.

    Add the mushrooms and tomatoes. Cook for another 3–4 minutes.

    Stir in the chili sauce and fish sauce. Add the shrimp at the very end – they will cook in 2–3 minutes.

    Finish with fresh lime juice. Taste and adjust the balance of flavors (salty-sour-spicy).

    Serve in bowls, sprinkled with coriander. You can also serve with steamed jasmine rice.

    If possible, use shrimp purchased with heads on – the heads can be used to make an even richer, umami-filled broth. Strain after cooking.
