Ingredients
- 1.2 liters chicken broth
- 10 tiger shrimp (peeled, with tails on)
- 6 kaffir lime leaves, torn
- 4 slices galangal root
- 2 tablespoons fish sauce (or to taste)
- 2 tablespoons fresh lime juice
- 1 tablespoon Thai chili sauce (Nam Prik Pao)
- 200 g button mushrooms
- 100 g cherry tomatoes, halved
- Optional: fresh coriander for garnish
Steps
- 1Flavoring the broth: Bring the chicken broth to a boil. Add the lemongrass, galangal, and lime leaves. Simmer for 5–7 minutes.
- 2Add the mushrooms and tomatoes. Cook for another 3–4 minutes.
- 3Stir in the chili sauce and fish sauce. Add the shrimp at the very end – they will cook in 2–3 minutes.
- 4Finish with fresh lime juice. Taste and adjust the balance of flavors (salty-sour-spicy).
- 5Serve in bowls, sprinkled with coriander. You can also serve with steamed jasmine rice.
- 6If possible, use shrimp purchased with heads on – the heads can be used to make an even richer, umami-filled broth. Strain after cooking.
