Preparation of the Russian dressing
In a small bowl, combine the mayonnaise, ketchup, grated horseradish, Worcestershire sauce, sugar, and paprika. Whisk thoroughly with a hand whisk, then season with salt and pepper to taste. Set aside for the flavors to meld.
Assembling and frying the sandwich
Butter one side of each slice of rye bread. Flip the slices over and generously spread the unbuttered sides with the prepared Russian dressing.
On two slices of bread (dressing side up), layer 2 slices of Emmental cheese, 100 g of beef ham, and 100 g of thoroughly squeezed sauerkraut on each. Drizzle with the remaining dressing, then cover with the other two slices of bread, buttered side facing outwards.
