Preparation method
First, prepare the pesto: put the spinach leaves with garlic, almonds, and olive oil into a food processor and blend until creamy. Then stir in the finely grated Parmesan and lime juice, and season with salt.
Slice the grilling cheese and fry both sides in a pan or on a grill until golden brown.
Wash the lettuce leaves and cherry tomatoes. Cut the tomatoes in half or quarters.
Chef's tip
For the pesto, you can also use toasted almonds for a more intense flavor.
