Halve the apple, remove the core, then cut into slices approximately 3 mm thick. Place in a bowl, pour over the chardonnay, and mix thoroughly so that the wine permeates the apple.
Slice the Brie cheese. Lightly butter one side of the toast bread with soft butter.
Cooking and Assembly
Heat a pan over medium heat. Place one slice of bread, buttered side down. Lay a few slices of cheese on top, then the soaked apple slices. Sprinkle with a little arugula, and spoon over the cranberry jam.
Chef's tip
If you do not wish to use alcohol, you can substitute the wine with a little apple juice or lemon water.
